- Get 1 cup semolina (suji)

- For the Sugar Syrup:In a medium sized pot add water & sugar.
- Cook just until the sugar has completely dissolved.
- Take off from heat and set aside.
- For the Suji Ka Halwa Base:In a large heavy based pot, heat the ghee.
- Then add the crushed cardamom pods.
- Then Add the semolina (suji).
- Cook for 2-3 minutes until it releases a nutty aroma.
- Then Pour in the sugar syrup and cook the suji ka halwa for 2-3 minutes.
- The halwa will still be very liquidy and bubbly.
- Do not cook any longer than 2-3 minutes and take off heat immediately.
- Cover with lid.
- Let rest for 10 minutes.
- After 10 minutes the semolina will have absorbed extra liquid and be in perfect consistency.
- Top with pistachios & Raisins.
