- Take 300 gm Brinjal
- You need 1/2 cup Onion slice
- Use 1 tbsp Ginger garlic paste
- Take 2-3 pieces Green chilli

- Provide 1 tbsp Til
- Provide 1 tbsp Coconut powder
- Take 2 tbsp Yogurt

- You need 1 tsp Coriander powder
- You need 1 tsp Cumin powder
- Use 1 tsp Sugar

- Use 1/2 tsp Cumin seeds
- Use 1/2 tsp Methi seeds
- Take 1/2 tsp Kalonji

Steps to make Shahi Brinjal Salan:
- Heat pan and add Peanuts, til & coconut powder and slight roasted. Then blend it and make a smooth paste.
- Heat oil in a pan add brinjal and fried and set aside.
- Add Red chilli whole, cumin seeds, methi seeds, kalonji, black mustared, curry leaves on the same oil and saute till fragrent.
- Then add onion and satue and then add ginger garlic paste and saute. Then add green chilli and mixed.
- Add salt, turmeric powder, cumin powder, coriander powder, black pepper, red chilli powder & sugar and mixed it.
- Then add the peanut paste and mixed. Then add yogurt and mixed. Cover and cook it 2-3 min.
- Then add fried brinjal and mixed. Then add hot water and stir. Cover and cook it 5-6 min.
- Serve hot with boiled rice.
