The ingredients needed to prepare Fried Yam and Egg sauce:
- Take 1/4 tuber of yam
- Get 2 cksp vegetable oil
- Provide to taste salt
- Provide 2 fresh tomatoes diced
- Use 1/2 bulb onions chopped
- Provide 1 fresh pepper diced
- Provide 3 eggs
Instructions to make Fried Yam and Egg sauce:
- Slice yam in desired shaped and wash, drain in a sieve and sprinkle salt and set aside
- Break eggs, add a dash of salt and whisk, once you are done, set aside
- Heat up frying pan and add vegetable oil, once the oil is hot, start frying yam, once its cook through and abit crispy, remove and place in an oil drainer; for the record I love my fries very cripsy
- Once you are done frying the yam, reduce oil from the frying pan and leave at least 2 tbs worth in the frying pan
- Add onions, tomatoes and pepper, then stir for about 3mins, add a dash of salt and stock cube if you wish, I don't use stock cube for my eggs
- Pour whisked eggs into the frying pan and scramble tills the eggs and tomatoes is thoroughly mixed up and the egg is fried
- Serve yam fries with tomatoes scrambled eggs
