  1. Take 200 gram Bengal gram
  2. Take 4 red chilli
  3. Use 1 teaspoon fennel seeds
  4. Get 1 teaspoon Jeera/cumin seeds
  5. Take 1 teaspoon ginger garlic paste
  6. You need 1 big onion
  7. Get 1 green chilli
  8. Get 1 string curry leaves
  9. Prepare To taste Salt
  10. Use As needed Oil for deep fry
  11. Use as needed water
Instructions to make Masala vadai:
  1. Soak the Bengal gram in water for 2-3 hours
  2. Then after soaking, in a mixie take red chilli, fennel seeds, ginger garlic paste, jeera and grind coarsely without adding water
  3. Then add the soaked Bengal gram in mixie along with already ground coarse mixture. Retain few Bengal gram say 2/3 tablespoon separately for mixing with ground bater. Grind the Bengal gram with out adding any water
  4. Transfer the ground mixture to a bowl along with retained soaked gram, salt, one finely chopped green chilli, onion and curry leaf and mix well. Please note do not add water at any stage
  5. Then apply some oil in hand and split the bater to rough size round balls and pat it flat in your hand and place it in a plate ready to fry as shown in below pic
  6. In a frying pan, pour oil allow it to heat and fry the vada for 7-8 mins until both sides is cooked well and mild brown colour is reached. Serve it hot with tea !
