The ingredients needed to prepare Fried Yam/Plantain and Fried Egg:
  1. Use 1/4 tuber of yam
  2. Prepare Plantain for frying
  3. Provide 2 cksp vegetable oil
  4. Get to taste salt
  5. Get 2 fresh tomatoes diced
  6. Prepare 1/2 bulb onions chopped
  7. Prepare 1 fresh pepper diced
  8. Prepare 3 eggs
Instructions to make Fried Yam/Plantain and Fried Egg:
  1. Slice yam in desired shaped and wash, drain in a sieve and sprinkle salt and set aside, slice plantain into desirable shape; sprinkle salt and set aside
  2. Break eggs, add a dash of salt and whisk, once you are done, set aside
  3. Heat up frying pan and add vegetable oil, once the oil is hot, start frying yam, once its cook through and abit crispy, remove and place in an oil drainer; do same for the plantain and drain inside a paper towel
  4. Once you are done frying the yam and plantain, reduce oil from the frying pan and leave at least 2tbs worth in the frying pan
  5. Add onions, tomatoes and pepper, then stir for about 3mins, add a dash of salt and stock cube if you wish.
  6. Pour whisked eggs into the frying pan and scramble tills the eggs and tomatoes is thoroughly mixed up and the egg is fried
  7. Serve plantain and yam fries with tomatoes scrambled eggs
