- Provide 3 cups basmati rice(washed & drained)
- Provide 4-5 cloves
- Prepare 1-2 cinnamon pieces
- Get 2 bay leaf
- You need 4-5 cardamom
- Prepare 3 tbsp ghee (clarified butter)
- Get 2.1/2 cup water
- Prepare to taste Salt

- Use 2 tomatoes sliced
- Use 2 green chillies
- Use 1/2 cup Coriander leaves
- Use 1/2 cup mint leaves
- You need 3-4 cloves
- Take 1-2 cinnamon pieces
- Get 2-3 cardamom

- Prepare 1 javanthri(nirav mace)

- For marinating chicken: take chicken in a bowl.. Add coriander powder, chilli powder, turmeric powder, biryani Masala, ginger garlic paste, kasuri methi, oil, salt and curd as per the measures mentioned.. mix well and marinate for 1- 2 hrs…
- Rice cooking: take a rice cooking vessel add water, ghee, cloves, cinnamon, cardamom, bay leaves..boil the water..Add salt as required..add washed and drained rice..mix well..close the lid and half cook the rice.. keep aside..
- Take a flat bottomed biryani cooking vessel..Add 2-3tbspn ghee.. let heat.. fry the garnishing ingredients: cashews raisins & onions.. keep aside..
- To the same vessel add the ingredients kept for cooking chicken: cloves, cinnamon, cardamom, star anise, mace..saute well & add onions, green chillies and tomatoes.. saute for 5-10min in low flame..
- Now Add the marinated chicken..saute well.. close the lid and cook for 5 min..
- Open the lid and add Coriander leaves and mint leaves.. now close and cook for 15 min in low flame…
- Open the lid and add half cooked rice to the chicken.. spread it well to cover the chicken..
- Sprinkle the garnishing(fried onions, cashews & raisins)on to the rice… close the lid and cook for 30-35 min in low flame..
- Chicken biryani.. done!!.. serve with salad and green chutney..
