The ingredients needed to make Kothmari Chiwda:
- Take 1 cup thick variety of poha/ flatten rice
- Take 1 cup chopped kothmari/fresh coriander leaves
- Take 1/4 cup peanuts
- Take 3 tbsp roast gram
- Use 3 tbsp cashewnuts halves
- Get 2 green chillies chopped into pieces
- You need Few curry leaves
- Get 1/4 tsp turmeric powder
- Provide 1 tsp red chilli powder
- Use 2-3 tbsp sugar powder
- Use 1/2 tsp garam masala
- You need to taste Salt
- Prepare As required Oil for frying
Steps to make Kothmari Chiwda:
- Heat oil in a frying pan. As heated add chopped green chillies, cashewnuts pieces, roast gram, curry leaves fry on slow flame till crispy golden brown. Remove in a strainer. Add peanuts and fry till crispy golden. Transfer it on a strainer to remove excess oil.
- Now fry all poha, on high flame by putting fistful at a time. Put on strainer to remove excess oil.
- Now place chopped coriander leaves in another deep soup-strainer and then place it hot oil to fry till crispy.
- Now in a mixing bowl add all the above fried ingredients. Also add turmeric powder, red chilli powder, sugar powder,garam masala and salt, mix all gently.
- Store in an airtight glass jar. Serve/ Relish delicious Kothmari Chiwda at tea time.
