  1. You need 150 grams Tofu
  2. Provide 6 grams Dried hijiki
  3. Use 50 grams Carrot
  4. You need 2 Shiitake mushrooms
  5. Take 50 grams Minced pork
  6. Use 2 tbsp Soy sauce
  7. Provide 2 tbsp Mirin
  8. Prepare 2 Eggs
  9. You need 1 tsp Vegetable oil

Instructions to make Gisei Dofu (Tofu Egg Omelet):
  1. Soak the hijiku in lukewarm water to rehydrate.
  2. Microwave the tofu to warm (I used an automatic heating setting). Drain in a colander.
  3. Julienne the carrot. Slice the shiitake mushrooms thinly.
  4. Heat a frying pan and fry the minced pork (omit the oil if using a non-stick pan).
  5. Once the pork starts to release its fat, add the carrot and shiitake mushrooms.
  6. Add the rehydrated hijiki and fry. Season with soy sauce and mirin.
  7. Break the tofu into small pieces with your hand. Add to the pan and fry.
  8. When all the moisture has evaporated and the ingredients look dry, transfer into a bowl. Leave to cool.
  9. Add 2 beaten eggs and mix well.
