The ingredients needed to prepare Dhanshak (veg):
- Take 1/2 cup chana daal
- Prepare 1/4 cup split green daal
- Provide 1/4 cup yellow moong daal
- Use 1/4 cup red lentil daal
- You need 1/4 cup tuvar daal
- Provide 2 tbsp white urad daal
- Prepare 1 cup fresh fenugreek leaves
- Provide 1 potato peeled and cut
- Take 2 onions peeled and chopped
- Use 1 brinjal chopped
- Provide 1/8 cup yellow pumpkin pieces
- Provide 1/8 cup bottle gourd pieces
- You need 4 ripe red tomatoes chopped
- Use For tempering
- Take 2 tbsp ghee/ oil(for vegan)
- Provide 1 tbsp cumin seeds
- Get 1/2 tsp turmeric powder
- You need 2 tbsp green chillies- ginger paste
- You need 1 tbsp garlic paste(as per your taste you can add)
- Prepare 1 tbsp dhanshak masala(shared before)
- Provide 1 tbsp red chilli powder
- Get to taste Salt
- Take 1 lemon (juice)
Steps to make Dhanshak (veg):
- Take all lentils in cooker vessel. Wash trice with water..soak for 1/2 hour.
- Wash,peel,chopped all vegetables mentioned in ingredients.
- Add chopped vegetables to soaked daals. Pressure cook for 4 whistles.
- Cool the cooked mixed dalas, vegetables. Smash them in mixer grinder jar.
- In kadhai add ghee or oil,warm it add cumin seeds to splutter,add turmeric powder,green chillies ginger paste,ginger paste, dhanshak masala powder,red chilli powder and saute for few minutes till ghee/ oil separate.
- Add smash mixture of cooked Daal vegetables mixture,add salt to taste, squeeze lemon juice. Mix well,cook for few minutes.
- Serve hot nutritious Dhanshak (curry) with jeera rice or buttered toast bread slices.
