  17. Provide 8 curry leaves
  18. Use 1 teaspoon mustard seeds

  24. Use 2 tbsp coriander seeds

Steps to make Tamarind rice [ Puliyogare ]:
  1. Spice mix preparation: Dry roast sesame seeds until golden brown and keep it aside in a mixie jar to cool. pour a teaspoon of oil and add in mustard seeds and let it crackle. then add coriander seeds, chana dal, urad dal, fenugreek seeds, cumin, and pepper and roast it until golden brown. now add in red chilies and curry leaves and roast it for a couple of minutes and transfer it to a mixie jar, along with the sesame seeds and let it cool. then grind it into powder. Spice powder is ready
  2. Pulikkachal Preparation: Soak tamarind in hot water for an hour. squeeze of the pulp and keep aside. Add 2 1/2tbsp oil in a pan and splutter mustard, red chili, and curry leaves. add tamarind juice turmeric and asafoetida. mix well and boil covered for 15-20 minutes. add jaggery and stir well. Add a pinch of salt and simmer until the oil separates. Add the prepared spice powder to this and combine well. stir continuously until thickens. Cool it and store it in an airtight jar. keep refrigerated.
  3. Rice Preparation: Heat oil in pan, splutter mustard seeds, peanuts,chana dal, urad dal, red chilli, and curry leaves. Add hing and prepared pulikkachal mix [ as needed]. Now add the cooked rice, adjust salt and combine well.
