The ingredients needed to prepare Okra/ Vendakka Sambar:
  1. You need To pressure cook–
  2. You need 2 cups toor dhal
  3. You need 2 tomatoes
  4. Get 10 garlic cloves
  5. You need 1 tspn asofetida/ hing
  6. Take 1/2 tspn turmeric powder
  7. Take For Vegetable–
  8. Take 500 g Ladies finger/okra
  9. Prepare For tempering–
  10. Take 1 tsp vadavam
  11. Get 2 dry red chilli (broken)
  12. Prepare 1 onion (chopped)
  13. Use 2 tomatoes (chopped)
  14. Use 2 tsp red chilli powder
  15. Use 1/2 tsp turmeric powder
  16. Take To taste salt
  17. Provide 3 tbspn oil
  18. Use To soak–
  19. You need 1 ball Tamarind(lemon size)in ½ cup water
  20. Use 5 tbspn coriander leaves (chopped)
Instructions to make Okra/ Vendakka Sambar:
  1. Take all the ingredients under To pressure cook in a cooker, add water and cook for 4 whistles. Lower flame for 10 minutes.
  2. Soak tamarind in water. Take ladies finger and dry roast till stickiness disappears. Keep aside.
  3. Heat oil in a vessel, add vadavam and dry red chilli. (Instead of vadavam you can also add mustard seeds,urad dhal, fenugreek seeds and chopped shallots and fry till dark brown)
  4. Next add curry leaves,1 tbspn coriander leaves.
  5. Now add onions and saute till translucent. Then add tomatoes cook till mushy.
  6. Add salt and red chilli powder. Saute till raw smell goes.
  7. Mash the cooked dhal in pressure cooker and add the ladies finger to it.
  8. Extract tamarind water. Add dhal and tamarind water. Check salt and tanginess. Cover and cook till it boils.
  9. Garnish with coriander leaves. Serve hot with steamed rice or for tiffin.
