  1. Use 10 ivy gourd (sliced)
  2. Get 1 Onion (sliced)
  3. Get 1 Tomato (chopped)
  4. Use 3-4 Dry chillies
  5. Prepare 5-6 stems Coriander
  6. Take 1 small piece Tamarind
  7. Use 4 cloves Garlic
  8. Take as per taste Salt
  9. You need 3 tbspn Oil
  10. Provide For Tempering-
  11. Use 1 red dry chilli(broken)
  12. Get 1/2 tsp Mustard seeds
  13. Prepare 1/4 tsp urad dhal
  14. Take 1 sprig curry leaves
Steps to make Ivygourd/Kovakkai chutney:
  1. Take all the ingredients as shown. Heat 2 tbspn oil in pan and saute onion, ivygourd and garlic first followed by dry chilli and coriander.
  2. Then add tomatoes and tamarind and saute till it's mushy. Fry till the raw smell disappears.
  3. Allow to cool completely. Add salt and grind to fine paste in a mixer adding very little water if required.
  4. Heat 1 tbspn oil,add the tempering ingredients and pour over the chutney. Tastes best with idli and dosai.
